Understand Your Fire

Successful grilling starts with learning how to manage heat.

Students learn how to establish and control cooking temperatures, recognize hot and cooler areas of the grill, and understand how changing the fire changes the way food cooks.

The goal is to move beyond simply turning on a grill or lighting charcoal and hoping the temperature is right.

Master Two-Zone Cooking

Two-zone cooking is one of the most useful techniques a grill cook can learn.

By creating both a hotter direct-heat zone and a cooler indirect-heat zone, you gain much greater control over the cooking process.

You'll learn when food should be cooked directly over the heat, when it should be moved away from the heat, and how to use both zones during the same cook.

Stop Guessing When Food Is Done

Cooking time alone doesn't tell you when food is properly cooked.

Learn how to use a thermometer correctly and combine temperature with other indicators of doneness.

The objective is to know what's happening to the food rather than relying solely on a recipe that says "cook for X minutes."

Principles You Can Use on Your Grill

Southern Thunder teaches grilling principles rather than requiring students to own a particular brand or style of grill.

Once you understand heat management, cooking zones, direct and indirect cooking, temperature and doneness, you can apply those skills to the equipment you have at home.

The equipment may change.

The principles don't.

Learn by Doing

Grillmaster Essentials combines instruction, demonstration and student participation.

Students first learn the principles, see the techniques demonstrated, and then put what they've learned into practice at the grills.

The purpose of the hands-on portion isn't simply to prepare food during class. It reinforces the principles so students understand what they're doing and can reproduce the techniques later.

Learn Why → See How → Do It → Put Your Skills to Work

  1. Learn Why

    Explain the principle.

  2. See How

    Demonstrate the technique.

  3. Do It

    Let students apply it.

  4. Put Your Skills to Work

Help them understand how to reproduce it at home.

Become a More Confident Grill Cook

Grillmaster Essentials is designed to give you practical skills you can use every time you light the grill.

Instead of memorizing cooking times and recipes, you'll leave with a better understanding of fire, heat, temperature, cooking zones and doneness — and how to use them to make better decisions at the grill.
